Appalam Kuzhambu

Applam Vathakuzhambu
Ingredients
Appalam - 2 nos ( torn into small pieces)
Mustard seeds - 1/2 tsp
Whole dry chilli - 2 nos
Toor dal - 1 tsp
Channa dal - 1 tsp
Methi seeds -  tsp
Curry leaves - few
Asafetida - few pinch
Tamarind - Gooseberry size( soaked in water and extracted)
Red chilli powder - 1 tsp
Coriander powder - 3 tsp
Salt to taste
Oil - 1 cup
Applam Kuzhambu Recipe
Method
1. Heat oil in a pan, add mustard seeds, whole dry chilli, toor dal, channa dal, methi seeds and torn applam pieces.
2. Saute for few seconds, add red chilli powder and coriander powder to the pan and stir well.
3. Now add tamarind extract, salt and a cup of water to the pan, bring gravy to boil.
4. Once gravy starts boiling add curry leaves and asafetida, reduce heat simmer gravy for few minutes.
Serve hot Applam Kuzhambu with steamed rice and poriyal

Color Block Party


Color blocking is not a fashion trend for the faint of heart. Wearing multiple shades of blue, orange, and red (at the same time) screams "LOOK AT ME DAMMIT!" But for an overcast day like today, its the only way to remind yourself that indeed, it is spring.

While I am both bold in appearance and opinion, my wardrobe would suggest something else. Until recently, Ive been guilty of buying black, grey, and nude clothing in excess. So when I spotted this uber-mod mini skirt at Zara this weekend. I simply could not restrain myself. I could also not restrain myself from pairing it with this watermelon pink top. Et voila! Insta-color blocking.

I could have added a sweater or scarf in a complementary green or blue, but I opted for a woven belt with gold (duh!) embellishment. When color blocking, its important to keep the shoes neutral. I mean GOD, youre not trying to look like a clown. These Sam Edelman platforms are my favorite for the season. The extra 4 inches of height they add is sickening.

Banana Ice Cream Bar Kem Chuoi

 I dont know what to say about this banana ice-cream bar, except you guys definitely got to try this out. This is my first attempt to make this delicious and tasty cold banana ice-cream bar, and it is oh so GOOD!! The even BEST part is, its super easy to make.!!   

Heres how you can make it:
4 apple bananas (chuối sứ) or any kind of banana you prefer
1 cup coconut cream
⅓ cup roasted peanuts (finely chopped)
Pinch of salt
4 Wooden sticks
1/2 tbsp of sugar   
1/2 tsp tapioca flour
2 tsp of cold 
Plastic food wrap

In a small saucepan, bring the coconut cream to a boil, add a pinch of salt, sugar, and mixed tapioca flour and water. Let it reduce for a little bit before taking off the heat, and allow it to cool down.

Place a plastic food wrap on the chopping board, or right over your kitchen counter. Insert the wooden stick to the midlle of the whole peeled banana, and place at the center of the plastic food wrap, and wrap it over. So when press flatten banana (using the side of a butcher knife or anything that you can press it with), it doesnt stick , unwrap and add about 1 tbsp coconut cream on each side and top with roasted chopped peanut, the wrap firmly.
 
Repeat process for the remaining banana, then freeze it until firm. There you have it, a super delicious banana ice-cream bar!! Enjoy and good luck :)

P.S. Keep in mind, if you are using the regular banana, you might need to add a little bit more of sugar because its not as sweeten as the apple banana!

2 Eggs

1 Cup wheat germ
1 (6 Oz) can tomato paste
cut 4 medium potatoes, diced
3 Carrots, chopped
1 stalk celery dice cut

Soya Chunks Pulao Meal maker Pulao


Learn how to make Soya Chunks Pulao in easy method
Soya Chunks Pulao
Ingredients
Basmati rice- 2 cups
Soya chunks/ Meal maker nuggets- 20 to 30 nos
Onion medium thinly sliced- 2 nos
Tomato small chopped- 2 nos
Green chilly broken- 5 nos( +/- to taste)
Ginger and Garlic paste- 1 tbsp
Coriander leaves- 1/4 bunch
Mint leaves- 1 bunch
Garam Masala powder- 2 tsp
Salt to taste
Ghee/ Butter- 2 tbsp

For tempering
Cinnamon- 1" stick
Cloves- 4 nos
Cardamom- 4 nos
Bay leaf- 2 nos
Cumin seeds- 1 tsp
Oil- 4 tbsp.
Meal maker pulao
Method
Wash and soak basmati rice in 4 cups water for few minutes.
Heat 2 tbsp ghee in a pan, add drained rice and fry rice in ghee on low heat until slightly browned, turn off heat and set aside.
Soak Soya chunks in hot water for 5 mins or until Soya chunks are soft, squeeze excess water from soya chunks and set aside.
Heat oil in a pan when hot add tempering whole spices, fry until aroma rises. Add sliced onion, broken green chillis and fry until slightly browned.
 Now add ginger and garlic paste and fry until raw smell leaves. Next add chopped mint and corinader leaves( reserve some to garnish), Soya chunks and chopped tomatoes. Saute for few seconds and add garam Masala powder. 
Pour 4 cups of water in which basmati rice was soaked to the pan, stir well and bring to boil. When water starts boiling add required salt and ghee fried basmati rice. 
Stir well on medium heat until 1/4th of the water is absorbed by rice. Now cover pan with tight lid and cook pulao on low heat for 10 mins or until rice is cooked and tender. 
Finally garnish with rest of mint and coriander leaves and serve hot Soya chunks pulao with your favorite mushroom korma or paneer tikka masala or mushroom masala.

Nighttime Dinner Salad with Chicken and Dried Cherries


This is sooo not what I had wanted for dinner last night.  I had started the day with a measley breakfast and proceeded with a paupers lunch and, as the day faded, I was starving.  As sometimes happens, however, it got to be late, too late really to fix anything substantial. Still, I had a hankering for something good (you know that feeling, when you want something good, but you dont know what it is).  Then, as I was pondering the ways I could (for the third time this week) transform the leftover roasted chicken into some sort of healthy but satisfying, filling but not too substantial, culinary treasure, the tornado sirens started sounding in my neighborhood.  I quickly turned on the tv to find that we were once again, for the second time in less than a week, in the bullseye of a line of severe thunderstorms.  I really do not like severe thunderstorms and while I actually enjoy the rumble of thunder that comes with your run-of-the-mill summer storm, these are of the ferocious type where the sky turns blackish green and you can feel the change in pressure in your head. My stomach turns, ties up in knots and my heart starts to beat faster.  The tv meteorologists make it sound as it the world may come to an end and, with sirens still blaring in the background, I decide to seek shelter in my closet.   I sat perched on top of my collection of flip flops and waited, convinced that my house would crumble around me at any second. *Of note, I have been known to needlessly panic and, at times, be a touch more dramatic than necessary.  The long and the short of this story is that the storm came and went, my house did not fall down around me and at 9:30pm I threw some lettuce, shredded chicken, onion, cheese and some dried cherries (for good measure) on a plate with some red wine vinegar and olive oil and called it dinner.

Canadian Bacon Pizza


Prep Time: about 20 mins Rise Time: 45-60 mins Cook time: 6 and 12 -15 mins
Oven Temp: 475
Dough:
3 cups flour
1 cup milk (or water)
1 tsp dry yeast
2 tbsp olive oil (or veggi oil)
1 tsp salt (optional)
1 tsp sugar (optional)

Heat the milk (or water) on the stove or in the microwave to around 120 degrees. I just use my finger to try and guess the temp. It just needs to be a bit hotter then room temp. Add the yeast. Let it sit for 8-10 mins. Add oil, salt, and sugar. Stir. Add flour a cup at a time and mix well. Knead dough for about 5-8 mins. Add flour if its too sticky. Pat into ball, place back into bowl, cover and let rise. If you pat the outside of the ball with oil it will keep it from drying out.

Knead risen dough. Roll out into circle or rectangle depending on the size of your pan or pizza stone. Pick a place to start on edge of rolled out dough and fold the edge inward. Continue rolling the edge in as you move around the edge. This creates your crust.

Pre-bake your dough for 6 minutes. Take out and use a fork to poke any air bubbles.

Add toppings. Cook for 12-15 minutes.

Toppings:
Sauce - I use my favorite canned spaghetti sauce or you can make your own
Mozzarella cheese (about 1 and 1/2 cup) - or more if you like
Ham - diced (we had ham for Sunday dinner, and I used the left overs)
pineapple - I use canned pineapple

These toppings are of course for a Canadian bacon pizza but you can put whatever topics your family likes best.

ARVI COLOCASIA ROGANI A VEGETARIAN ROYAL DISH

Dear foodies 
How are you? Thanks to FB I could only know how many great dishes you have posted at your blog. But could hardly read any. I was back home on a brief vacation and will vanish again into the deserts by next week. Sahara permitting,  this should be my last visit and will be in kitchen full time after that. There was not much of kitchen activities this time. But managed to make a awesome mango chutney from Jagrutis recipe.
Here is a great recipe from the book of Maharaja of Sailana. This has been a party dish since long. Spicing remaining same , one can try raw banana, yam, ratalu, Paneer , chicken , mutton etc.
THE RECIPE 
Here we will use fried Arvi in an awesome gravy of fried onion paste and spices. As usual , like most Sailana dishes, it will be cooked in ghee and not vegetable oil. Ghee is a very good fat as it is digested easily compared to vegetable fats. 
I had to make one deviation ( which I normally dont do) in garam masala . I did not have time to make Sailana Garam masala , so have used an improvised version. It is good .And moreover most of you might not have tasted Sailana masala , so you wont be able to make out the difference. Here we go.
INGREDIENTS
Arvi ( colocasia) 500 gms
12 gm salt for soaking Arvi ( not for the main gravy) 
200 gm Ghee 
75 gms onion thinly and evenly sliced.
6 level tsp chili powder ( you may use a less hot or Kashmiri chili) 
6 level tsp coriander seed powder
11/2 level tsp cumin seed powder
20 pcs pepper corn freshly ground
15 gms ginger scraped and ground.
120 gm curd
1. Bay leaf 
Salt to taste
Garam masala ( my version) You can use your version or an off the counter one. 
( grind the following) 
Cinamon 11/2 inch
cardamom 4
clove 4
mace 1/2 inch
nutmeg 1/8th of a nut
star anise 1/4 flower
( Take only 11/2 level tsp of this )
PROCESS
Peel the Arvi and cut to half lengthwise. Prick generously with a tooth pick or fork. Add salt in about 4 cups of water and soak the Arvi for 1/2 hr. Take out and wash in fresh water twice, wipe and keep aside.
Heat the ghee in a Kadhai , fry the Arvi in low heat till golden/ light  brown. Take out and keep aside.
Raw and fried Arvi

In the same ghee fry sliced onion to golden brown , remove and grind.
In the same ghee add the fried Arvi, fried and ground onion and all the above ingredients. Stir and mix well. You may need 1/4th cup of water .

All ingredients just added 

Cover and put on dum till the water dries out, almost completely and ghee separates.

Ready for use

Devour
