SANDRAS TRANSLUCENT ASIAN NOODLES and PORK over RICE

INGREDIENTS:
***Noodles:
¼ lb. dried bean thread noodles (found in the asian section)
***Meat
2 tablespoons peanut oil
½ pound pork, thinly sliced
***Sauce:
3 tablespoon low-sodium soy sauce
3 teaspoons rice wine vinegar
1 teaspoon sesame oil
1 teaspoon asian chili sauce
1 teaspoon honey (link to Homemade Alaska Fireweed-Clover Honey)
1 teaspoon fresh ginger, finely chopped
1 garlic clove, finely chopped
2 green onions, finely chopped diagonally
1 jarred roasted bell pepper, finely chopped
2 cups low-sodium chicken stock
Garnish:
1 tablespoons fresh cilantro, roughly chopped
--1 cup prepared steamed basmati rice
METHOD:
Prepare steamed basmati rice.
Cut the dried bean threads with kitchen scissors, and soak a ¼ lb. in a large bowl of hot water for 10 to 12 minutes, just until soft. Drain in colander, discarding the water.
Meanwhile, prepare all the sauce ingredients, stirring to combine in a medium-size bowl, and set aside.
Drizzle peanut oil in a large nonstick skillet and heat to medium-high. Add the sliced pork, and stir-fry until brown and slightly crispy, about 3 to 4 minutes. Pour the sauce ingredients into skillet to deglaze, and scrape the bottom to loosen any meat drippings. Add the noodles to the sauce in the skillet and heat just until the sauce simmers and the noodles are warmed through.
Place steamed basmati rice in two pasta bowls, and ladle the pork and noodles and sauce equally over the top, then garnish with cilantro. – Enjoy!

Noodles Vs Spaghetti Fried egg Spaghetti
Can you identify the picture below? is it Noodles or Spaghetti. I know, it is difficult to find unless you have tasted it. Noodles and Spaghetti both look alike but they have a big difference form the way of cooking, serving and eating.
The main ingredient of spaghetti is wheat flour, but noodles can contain different types of ingredients such as rice starch, rice flour, potato starch etc., A good quality of spaghetti is prepared of durum wheat. Noodles originated from China, where as spaghetti from Italy. The way of boiling of noodles to different from spaghetti. Noodles are boiled in hot water with out any addition of flavor, where as spaghetti is boiled in a salted and herb flavored (optional) hot water with few drops of olive oil.
Noodles are served after stir frying them along with the ingredients where as spaghetti is served with sauce on topping. Generally, spaghetti is had with fork and Noodles with a chopstick.

Now, enough of the story about their difference and jumping to the recipe.
As mentioned above the cooking of noodles and spaghetti is very different But, I treat them the same and some times cook spaghetti like noodles and noodles like spaghetti. I do not mind changing the recipes because all that matters is about satisfying our taste buds. Here, I made a fried egg spaghetti with spaghetti sauce.
Ingredients
Spaghetti-1/2 box (100gr)
onion finely chopped-3tbsp
green chili finely chopped-1/4tbsp
olive oil-1tbsp
salt to taste
pepper powder to taste
spaghetti sauce-2tbsp
ginger garlic paste-1/2tbsp
egg-1
Method:

Method:
- Take a deep bottom medium size pan and and fill it with 3/4 volume of water.
- Bring water to boil and add 1/4tbsp salt, 2drops of olive oil and pinch of oregano/thyme (optional).
- Add spaghetti, and cook till it is done (Make sure you are not over cooking it.
- Take another thick bottom deep pan and add 1tbsp of olive oil and heat it.
- Add onion and green chili and cook till onion turns transparent.
- Add ginger garlic paste and when the raw flavor goes away, add spaghetti sauce and mix well.
- Keep stirring and cook for 2more min under medium heat.
- Drain water from spaghetti and add to the pan, mix well till all the ingredients are uniformly mixed.
- Check for salt and pepper and add if required.
- Now in the same pan move the noodles to one side and create an empty space, break open egg and add it on the other side of the noodles.
- Cook till it obtains a omelet kind of texture, now scramble it and mix with the spaghetti.
- Serve hot, Hope you like my recipe and keep visiting for more wonderful recipes. You can also make Noodles in the similar style. I used tomato, mushroom raghu sauce, you can use any kind of sauce or only tomato puree instead of sauce.

Hakka Noodles
| Hakka Noodles Recipe |
Ingredients
Boiled plain noodles- 2 cups
Red chilli oil- 2 tsp
Cabbage shredded- 1/2 cup
Capsicum cut into strips- 1 no
Carrot cut into strips- 2 nos
Spring onion whites chopped- 4 bulbs
Spring onion green chopped- 1/2 cup
Ajinomoto( MSG)- 1/2 tsp
Oil- 2 tbsp
Salt and White Pepper to taste

Method
Toss the boiled noodles with red chilli oil and pinch of salt, set aside.
In a large pan heat oil, add the vegetables, spring onion whites and quickly stir fry for few seconds. Add the boiled noodles and toss again for a second. Season the noodles with ajinomoto, salt and white pepper. Finally add spring onion green to noodles, mix well and transfer Hakka noodles onto plate. Serve hot.

Tips
Do not cook the vegetables too long, short cooking will keep vegetables crunchier.
Always boil the noodles until 3/4th cooked( al-dent). Drain the noodles completly in a colander and toss with 1 tsp oil. Otherwise the noodles will turn too soft and sticky.
