Announcing Cooking Concepts 5 Holiday Baking

It’s mid November, The Holidays are upon us – Thanksgiving, Hanukkah, Christmas and New Year Beginning. I am eagerly waiting for these holidays so that I can get some break from my work and can plan for vacations ,parties and get together’s  :) Hope everyone are also planning for a great fun !!

Coming to this month’s concept is "Holiday Baking". No Christmas or New Year is complete without baking treats!!  So why waiting girls it’s time for baking.
As this holiday mood goes till December end, so I am extending this month’s concept till end of this year.

The Things That Everyone Should Know About Cooking

Are you feeling overwhelmed by the demand to prepare family meals every day? Do not let cooking infuriate you! This article contains a number of tips that will make the process of preparing meals a lot easier. When you apply these tips, youll wish you had known about them sooner.

While you may wish to cook a fancy dish, dont experiment when you need to cook for an important person. Your date, boss or family will be impressed with your cooking if you prepare something great, not if you try a complicated recipe you are not mastering. Impress them by cooking a meal you already know you can prepare well.

Take advantage of stackable cooling racks. When you take on big baking projects like several batches of cookies or cupcakes, the finished batches can crowd your counter space. Stacking racks make the most of kitchen real estate. Stacking in vertical layers opens up the space you need to work in.

Fresh herbs and other kinds of seasonings can help spice up even the simplest dish. Elaborate dishes with multiple flavors can really be enhanced by using dried herbs, oregano and basil are great ones to use. Fresh herbs are still preferred, and they will provide a much better taste to your dish. You could start your own herb garden to always have fresh products.

Cooking doesnt have to be an exact science; thats baking. But you should still measure the amount of oil you cook with. Pouring straight from a bottle does not give you an accurate idea of how much fat you are using, which can result in overindulgence. That way, you know exactly how much oil you use and you can monitor your caloric content of your meals easier.

When you are purchasing food to make a recipe, read your labels. Most common cooking supplies have hidden ingredients that are unhealthy. Look for products with a low level of sodium, fat and sugar to make sure you are cooking a healthy dish.

If you are just beginning to cook more of your meals, go straight to the nearest bookstore or library to find a cookbook that has simple, fun recipes. Try a few recipes, and be patient with yourself as you are mastering this new skill.

It will be very helpful to have all cooking supplies nicely organized. Supplies and staples kept in disarray will have you scrambling when trying to find a needed utensil or ingredient. Keep things that are similar in the same place. As an example, keep all of your spices stored in one cabinet for ease.

Be sure to take excessive fat out of your stew or soup. To eliminate any extra fat in your stew or soup, allow the dish to cool completely so that the fat will rise to the top. If you don̢۪t want to wait for your soup broth or stew to cool to remove some of the excess fat, you can put a piece of ice on a slotted spoon and skim the spoon across the top. The cooled fat will adhere to the spoon and ice cube. The fat should then gather on the ice. Another method is to blot away the fat using a power towel.

It can be overwhelming to cook for your whole family. Fortunately, there are tons of ways to make cooking easier and to make the results of your labors in the kitchen more rewarding. You should be relaxed when you are walking into your kitchen.

Cooking Spinach Cabbage and tomato together causes Kidney stones Is that true

There is a rumor in South Asia especially in India that cooking spinach and tomato together causes kidney stones.

Is this rumor true?, the answer to this question is partially YES. My mother suffered from kidney stones few years back. After the operation I asked the doctor about the diet that my mother should follow. The doctor advised to avoid food that is rich in calcium for example milk, eggs, leafy vegetables etc.,
but he did not advised to cut them off completely from a regular diet, he told to reduce the intake.


When I also asked about this rumor, the doctor replied, of-course that is not completely false because Both Spinach and Tomatoes have Oxalates. These substances when the balance of minerals in body is disturbed, tend to mix with calcium( spinach, mint and other greens are rich sources) and form kidney stones. This happens only in people whose body metabolism predisposes them to form stones. The best way to avoid stone formation is to stay well hydrated. Drink atleast 1.5 litres of water in a day. 


Also when using tomatoes, it is good to de seed them and use. Other sources for oxalates are Coffee, tea, nuts like peanuts, chocolate etc...

About cabbage and kidney stones, it is not true. But it is true that goitrogens ( things that interfere with the goitre in the absorption of Iodine) in cabbage interferes with the production of thyroid hormone and hence people withHypothyroidism should take less amount of cabbage.

Ration Book Cooking Thursday 8th November

Porridge!

You may have noticed that Ive been eating porridge for breakfast on most days of my Ration Book Cooking challenge.  This would be a real challenge for me if it wasnt that Id been sent some Flahavans Irish Course Cut Oatmeal.  It is probably closer to the porridge that was eaten during the war, the kind that had to be soaked overnight and then cooked for some time to soften it. That isnt the case with this as the Irish Coarse Cut Oatmeal is made by kilning and steam cooking the oats and cutting them into smaller pieces, resulting in a textured porridge, that can be cooked in 3 minutes in the microwave or a little longer in a pan on the hob.



I am really not a huge fan of porridge made with rolled oats, it is too slimy for my taste, but porridge made with this coarse (steel) cut oatmeal, has real texture and a good taste as well as being good for you.  My father always had his porridge made with salt and this oatmeal is great served this way, a great savoury breakfast.  It also works well with sweet flavours, but youll have to wait till after the Ration week to find out about that!





Ministry of Food Leaflet No. 22 is all about Oats and Barley and features, not only porridge, but also a Swiss Breakfast Dish which appears to be a version of Bircher Muesli. 

Porridge - Recipe 1
NB - If thick porridge is preferred use the larger amounts of oatmeal, rolled oats or barley kernels. 4-6oz oatmeal
2 pints water
2 tsp salt

Soak the oatmeal in water overnight.  Next morning add salt, bring to the boil and boil for 15-20minutes, stirring occasionally to prevent sticking.

Recipe 2
6-8oz rolled oats or barley kernels
2 pints cold water
2 tsp salt

Mix the rolled oats or barley kernels with a little of the cold water. Boil the rest and pour on to the oats stirring well. Add the salt and boil the porridge for  5-10 minutes stirring at intervals

Swiss Breakfast Dish
4oz rolled oats or barley flakes or kernels
4 tbsp milk
1/2 - 3/4lb grated raw apple
1-2 tbsp sugar

Soak the rolled oats or barley flakes or kernels overnight in barely enough water to cover.  In the morning beat up well with the other ingredients.  This is a delicious alternative to porridge on summer mornings.

Wartime Kitchen Menu for Thursday 8th November


Breakfast
Porridge made with Flahavans Irish Coarse Cut Oatmeal

Lunch
Sandwich made two slices of Wartime Loaf and 75g cheese and a tsp of homemade chutney

Dinner
Parsnips with Cheese (from Vegetables for Victory) as I havent made this yet, you will have to wait until tomorrow to see how it turns out.




WW2 Rations 1940 for three people
Butter 150g (6oz)  75g Butter
Bacon or ham: 300g (12oz)  bacon in the Haricot Bean dish
Margarine: 300g (12oz)
Cooking fat/lard: 300g (12oz) 200g lard 190g lard (tsp of veg oil)
Sugar: 675g (1lb 10oz) 650g (25g black treacle used)
Meat:  1350g (3lb)
Milk: 9 pints occasionally dropping to 8 pints 8 3/4 pints
Cheese: 150g (6oz) rising to 675g  (1lb 10oz)? 75g cheese
Eggs: 3 fresh eggs per week  0 fresh eggs
Tea: 150g (6oz) 130g 110g 70g
Jam: 150g (6oz) per week 125g
Dried Eggs 3 packets  (36 eggs every four weeks)   9 eggs for one week
Sweets: 262g (3oz) per week.
